Simple Baked Cinnamon Pears with Walnuts and Coconut Vanilla Ice cream

Looking for a really simple delicious dessert? This Baked Cinnamon Pear cannot be any simpler. I found this recipe in “Medical Medium Life-Changing Foods” byAnthony William. This book is a must-read for health and ingredients knowledge. You can definitely tweak this recipe to your liking.

Here is the recipe:

Ingredients

4 Pears
2 tbs of maple syrup per pear
1/4 Chopped Walnuts
1/2 tsp Cinnamon
1 scoop of vegan Coconut Ice Cream (optional)

Preparation

Start by preheating the oven at 375 degrees F. Wash and slice the pears in half lengthwise. Remove the seeds with a spoon to create a scoop. Next cut a small flat piece in the back of each pear to allow to stand still. In a large pyrex, grease with vegan butter or oil. Rinse and chop walnuts then place inside the pears. Drizzle the maple syrup over the walnuts and sprinkle the cinnamon over the pears. Place in the oven for 20 minutes until pears are tender. (if pears are not ripe bake for 10 more minutes) Serve warm with a scoop of ice cream and fresh mint leaves. Enjoy!

One Year Wedding Anniversary | Marriage Q&A

Here we are one year later and I still can’t believe that I’m married to my best friend. Ralph and I started dating over 9 years ago and I wished we filmed or recorded ourselves throughout that time.  Now that we are married, I want to share every year of our marriage so we can look back at these memories many many years later. Our bodies are the same bodies from the beginning of human creation, however, we have been ingesting food that is man-made, therefore causing disease. I’ve learned that eating what comes from the earth, staying as close to your native diet, and refraining from processed, GMO, animal products makes complete sense. Start incorporating more fruits and vegetables into your diet and see your body renew itself.

Girls Staycation in Miami

Hello sunshines,

Last week, my childhood friend Bianca came to visit and we had a blast exploring Miami like tourists. It is so funny how I live in Miami but I have never taken the time to explore it as a tourist. When you live your day to day and go to work, you never see your city from a vacation destination eye view but this time I got to explore it with a friend. Miami is such a big tourist destination and I am so happy I was able to see it through different eyes. Here are some highlights of the best places we visited in Miami.

1. Wynwood Neighborhood

If you like art then you will love Wynwood. The whole neighborhood is a giant art display. The Wynwood walls park is a free art park with funky walls and a cool artsy vibe. This is the best place to take your Instagram pictures. The whole street is filled with cozy shops, colorful walls, and great restaurants.

2. South Beach

When people think of Miami, they think of South Beach. South Beach is definitely a must visit. With beautiful white sandy beaches and turquoise blue water, this is a tropical paradise. It can get a bit crowded so I recommend going during the week. There is nothing better than to take a dip in the ocean and take in the scenery.  It also the best Instagram spot.

3. Bayside Market Place

If you’re in the mood to visit some of the celebrities houses then take a sunset cruise in Bayside to islands around South Beach. Take in the beautiful millionaire houses while sipping of a pina colada. When you get back to shore, Bayside is the place to be for fun outdoor entertainment. There are shops, restaurants, live music, and so much more.

4. Little Havana

Havana oh Na Na… lol Little Havana is the place to be for some cuban food and salsa dancing. The cool old town is packed with history, wall arts, and the famous Domingo park. Take a stroll through this town and you will feel like a local of Havana in no time.

So moral of the story is, you don’t need to get on a plane to enjoy a vacation. Even if you don’t leave by the beach, there are always hidden gems in every city waiting for you to explore. Especially if you include a combination of good friends, good food, and chick outfits for the gram!

3 Warm & Healthy Caribbean Vegan Recipes!

 

Winter in Miami has been really amazing. Not too cold and not too warm. Waking up to high 70 degree and cool winds just make you want to cozy up and cook some warm dishes. Today I am sharing 3 plant-based recipes that are warm and super delicious.

RECIPE 1: SOUP-JOUMOU or HAITIAN SQUASH SOUP

Processed with VSCO with hb1 presetWith my Haitian background, there are many recipes that are not vegan but I have found that making these recipes with a plant-based twist is actually much tastier. I find that the taste of squash is much more prominent however you can use this recipe and add your own twist. Here is the recipe.

Ingredients

1 tablespoon olive oil
1 onion, chopped
1 whole garlic
1 jalapeno (or 1/4 habanero), chopped
1/2 of a medium size squash, diced
2 carrots, chopped                                                                                                                                                                1 stock of celery, chopped
1 teaspoon fresh thyme leaves
1-1/2 teaspoons allspice
4 cups vegetable broth
1 bunch of cilantro leaves

Preparation

Cut and boil the squash in a large pot with water. Save the water, then remove the skin from the squash. Blend squash with hot water until smooth like puree. In a large pot, add oil, chopped onion,  chopped carrots, and celery. Let vegetables cook for about 5 minutes then transfer squash puree to the pot and add vegetable broth, allspice, jalapeno, thyme and cilantro leaves, and whole garlic. Let soup cook on medium heat for about 10 minutes and serve with bread and vegan butter.

RECIPE 2: QUICK & SWEET PEACAN AlMOND OATMEAL

Oatmeal has definitely been my Go-to Breakfast because it is so simple to make. This oatmeal is a bit like a creamy soup but once it cools it thickens a little. Here is the recipe.

Ingredients

1/2 Cup of Instant Oats
1.5 cups of almond milk
1 tbs of cinnamon powder
1 tbs of vanilla extract 
A hand full of Pecans chopped 
1 banana
3 strawberries
1 tbs of almond butter

Preparation

Bring 1/5 cup of almond milk to a boil. Add cinnamon and vanilla extra and stir until well mixed. Add the rest of the almond milk than the oats. Stir and let cook on medium heat. when done remove and add to nice eating bowl. Add the spoon of almond butter, chopped pecans, banana, and strawberries.

RECIPE 3: CHOCOLAT PAY or HAITIAN HOT CHOCOLATE

Hot chocolate is one of those things you find almost anywhere; however, Haitian hot chocolate is made with pure cacao. Here is the recipe.

Ingredients

1/2 cup of pure 100% raw cacao powder
2 cups of almond milk
3 tbs of cinnamon powder
1 tbs of vanilla extract 
2 full anise seed dried
Brown sugar to sweeten to your liking

Preparations

In a large pot, bring half a cup of almond milk to boil. Add anise, cinnamon, and vanilla extra and stir until fully mixed.  Add rest of almond milk, cacao powder, and sugar. Stir until cocoa is completely dissolved. Enjoy with bread, butter, and cheese sandwich -vegan of course!

Cartagena Travel Guide! Colombia’s Most Romantic City

 

Cartagena is definitely one of the most romantic Caribbean cities in Colombia. It is very diverse with the historic towns and the new highrise buildings all along the coast. You get both the modern city life, the historic towns and charm, and the beach life in one area.

We started our trip on a Friday night and headed directly to the old city for some dinner. The atmosphere there was wonderful the people, the music, the shops etc. There is no shortage of restaurants or activities. You’ll find each plaza with music, vendors, decor, and so much more.

 

The next day we headed to the old city and walked around. It’s easy to get lost in the old city but its the kind of experience you want when roaming around in Cartagena. If you are looking for an authentic and local experience, it is absolutely important to try small food vendors. The taste of the food was deliciously full of flavor and absolutely divine. Its the quality of ingredients you expect to get from a tropical city.

 

Day 3, we headed to Blue Apple Beach, a 15 min boat ride from the city and you are in a magical oasis. The boat ride is an adventure in it of itself as you are basically in a speedboat. We arrived at the cozy beach club which includes massages, daybeds, pool, volleyball court, giant board games, and music.

 

Our last day in Cartagena, we decided to head to a very popular spot called Cafe del Mar to watch the sunset. This restaurant has a wonderful view of the beach and is located right on the wall which is such a romantic touch. You can’t help but fall in love when walking around this city.

 

If you ever visit Cartagena, be sure to plan ahead as there is so much to experience. Sending you all lots of positive energy 🙂

Raw Vegan Breakfast Ideas

One of the best things about living in Miami is the tropical weather all year round. Sure we get our cold fronts but not more than 2 weeks. Smoothie bowls are currently my favorite breakfast meals. They are so easy to make and full of nutrients. All you need is a high-speed blender and some pretty bowls. Here are 3 easy smoothie bowl recipes.

Dragon Fruit Bowl

Serves 1

INGREDIENTS

1 cup frozen Dragon Fruit
½ cup Almond Milk
2 pitted dates 
½ cup granola
2 strawberries, sliced
3 ripe bananas
half a handful of coconut flakes
PREPARATIONBlend the dragon fruit, almond milk, dates, and 2 1/2 bananas together until smooth. Transfer to a bowl and top with the granola, strawberries, sliced banana, and coconut flakes.

Acai Protein Bowl

Serves 1

INGREDIENTS

1 pack of frozen Acai
1 cup frozen mango
2 ripe bananas
¼ cup almond milk
2 pitted dates
A handful of coconut flakes
3 strawberries
A handful of blueberries
1/2 scoop of protein powder
1/2 cup of granola

PREPARATION

Blend the Acai pack, almond milk, dates, mangos, protein powder, and bananas together until smooth. Transfer to a bowl and top with the granola, strawberries, blueberries, and coconut flakes.

Green Smoothie Bowl

Serves 1

INGREDIENTS

A hand full of Spinach
1 cup frozen mango
2 ripe bananas
¼ cup almond milk
2 pitted dates
A handful of coconut flakes
2 strawberries
A handful of blueberries
1 Tsp of Spirulina
1tbs of Chia Seeds
1/2 cup of granola 

PREPARATION

Blend the spinach, almond milk, dates, mangos, and bananas together until smooth. Transfer to a bowl and top with the granola, strawberries, blueberries, chia seeds and coconut flakes.

What I Brought to Thanksgiving Dinner (Plant-based Thanksgiving Meals)

Happy Thanksgiving everyone!

At my sister’s house in Jacksonville now, soaking up the cool fresh air and calmness that comes with leaving Miami for a few days. Just had Thanksgiving Dinner which included my Mushroom Loaf and Roasted Sweet Potato Chunks. It was my first time making this recipe and it was really delicious.

Vegan Mushroom Loaf Recipe:

Ingredients

  • 1 1/2 cups of chopped Mushroom  (I used Common White Mushrooms)
  • 1/2 cup Chopped Red bell peppers
  • 1/2 cup of celery chopped
  • 1 cup of onions chopped
  • 1 Tbs of olive oil
  • 3 garlic cloves minced
  • Salt and black pepper to taste
  • 1 Tbs of thyme, oregano, chili powder
  • 2 tbs of cumin powder
  • 1/2 cup of ground cashews
  • 1/2 cup of all-purpose flour
  • A bit of sriracha sauce optional

Sauce: This is optional as I did not have BBQ sauce. I basically mixed tomato paste, agave, paprika, and steak sauce.

Directions

  1. Heat saucepan on medium high, add olive oil then chopped onion, celery, mushrooms, Bell peppers, and garlic
  2. Add spices Chili, oregano, thyme, cumin, salt and pepper, sriracha sauce and cook until mushrooms have shrunk
  3. Place in a large bowl then add cashews and all-purpose flour. Mix well then transfer to baking pan.
  4. Place in the oven for 25 minutes at 350 degrees F. Add the BBQ sauce right out the oven.

Roasted Sweet Potato recipes:

Ingredients

  • 3 regular size sweet potatoes
  • 1/2 cup olive oil
  • Salt and pepper to taste
  • 1/2 cup of parsley leaves
  • 1 tbs of onion powder

Direction

  1. Peel and chop the sweet potatoes
  2. In a bowl mix, oil, potatoes, and spices then place on baking sheet
  3. bake in the oven at 400 degrees for 30 minutes

Fresh Home Made Pomegranate Slushy (Health Benefits of Pomegranates)

If you are a health enthusiast like me and are looking for a healthy and delicious juice to cool down on a hot day, then you have to try this pomegranate slushy. As you may know, pomegranate contains more than 100 phytochemicals known to fight cancer and other diseases. Like fresh green juices, pomegranates have a high-level of antioxidants, vitamins, and are known to dissolve kidney stones or cyst. They are a great blood builder and if consumed on a regular basis help to unclog pores and regulate hormones as they flush out toxins.  Adding Pomegranate to your diet may also reduce your risk of chronic diseases and inflammation.

This pomegranate slushy is sweet, delicious, and healthy; here is the super simple recipe!

Serves 2-4 people |

Ingredients

  • 2 Pomegranates
  • 2 cups of Coconut water
  • 2 tbsp of Agave nectar
  • Shaved ice

Directions

  1. In a high-speed blender, add ice and blend until snowy consistency and set aside in the freezer
  2. Use your paring knife to remove the flower from the top of the pomegranate and start deseeding.
  3. Add seeds, coconut water, and agave to a high-speed blender and blend until smooth.
  4. Strain your juice using a nut bag and set aside.
  5. Place the shaved ice in the desired container and add the pomegranate juice.
  6. Enjoy right away!

Date at the Museum – Creative Date Ideas

I love going on fun and creative dates. A few months ago, Ralph and I visited the newly built Frost Science Museum in Down Town Miami. We previously visited the Science museum which was located in Coconut Grove years ago which was now moved to Downtown. My first impressions of the place is that of a modern and green ideal. The outside structure resembles a dome which houses the planetarium and is powered by solar panels. The rooftop aquarium has a breathtaking view of the Port of Miami. Admissions are $28 for adults and $20 for children a bit pricey but well worth it.

So why the museum for a date? I think a museum date is a great option because it allows you to understand your partner mindset. While browsing around the museum you will talk about similar interest and see how your date sees the world through their eyes. I highly recommend trying the planetarium. It is a magical place that reminds you how massive the universe really is. Be sure to book your tickets early for the show as they are usually sold out. There is also a huge aquarium on level 3 with beautiful coral and colorful fish. I enjoyed this date and would recommend it to any couple -especially as a first date! Vegan Corn Meal Porridge (Caribbean Polenta)

Hi Friends,

If you are looking for a healthy savory breakfast recipe look no further. If you like grits you will love this recipe. It is a favorite of mine and Ralph. I used to eat it for breakfast when I was younger with fish but I made a few changes and added my own vegan twist to this recipe and it’s delicious. This dish is as simple as it can be and just as tasty. With a puree like a texture and garlicky zest, This is a must try the recipe!

Serves 2 people |

Ingredients

  • 3/4 cups yellow cornmeal
  • 3 cups Pure Filtered Water
  • Small minced white onion
  • 3 large garlic cloves chopped finely
  • 1/4 cup of spinach
  • 1/4 of cup of parsley
  • 1/2 of one large Red pepper
  • 1 Tbs of olive oil
  • Salt and black pepper to taste
  • 1 Hass avocado or 1/2 of one large avocado to serve

Directions

  1. Heat saucepan or pot over high heat. Add oil.
  2. Stir in the garlic and minced onions until they are translucent.
  3. Rinse the cornmeal and add to the saucepan.
  4. Add water, salt, pepper, and stir
  5. Cover the pot and reduce heat to medium-high and let come to a boil.
  6. Stir in the spinach and parsley and leave uncovered. let it cook for 20-25 mins.
  7. In a separate pan, add oil, finely chopped red peppers and salt and pepper to taste.
  8. let pepper cook for about 10 minutes on medium heat.
  9. Remove from heat. Serve with slices of avocado.
