5 Quotes That Will Inspire You To Become The Best Version Of Yourself!

If there is one thing that can change your mood it is reading positive inspirational quotes. Quotes have always been a love of mine. I use them to motivate and inspire me in all areas of my life whether it be career, love, friendships, life, you name it! Here are the quotes that inspire me.

This quote is such a key learning point for me. I’ve learned that there is no such thing as fear, anger, or any negative emotions when you are grateful. Having a heart of gratitude can change your emotions and create abundance. We have soo much to be grateful for. We live in a world with endless possibilities and in an era where you can be anything you want to be. Every day write one thing you are grateful for and eventually, you will train yourself to focus on abundance and not scarcity.

This quote has inspired me to live a vegan lifestyle and I am grateful for it. When the father of medicine says that food is medicine and medicine is food it woke something inside me. Most people believe health is the absence of disease but health is so much more than that. I realized the answer to disease is diet (in most cases). Our bodies are the same bodies from the beginning of human creation, however, we have been ingesting food that is man-made, therefore causing disease. I’ve learned that eating what comes from the earth, staying as close to your native diet, and refraining from processed, GMO, animal products makes complete sense. Start incorporating more fruits and vegetables into your diet and see your body renew itself.

This quote is still a learning process for me but I love to remind myself to stop talking and start doing. Most of us, myself included, think discussing thing is a solution but in reality, we are just venting. We must learn to quiet the chatter and go to work on our dreams. I am a creative person and I love dreaming and talking about ideas however when it comes to actually doing it, I fall short. This quote inspires me to focus on taking actions instead of talking about the outcomes. Does that happen to you too?

When I was growing up I felt insecure about my body, my accent, etc and was always very shy even though I have a bubbly personality. I was never appreciative of what I have. This quote has inspired me to love myself as I am because the beauty of it is that there is no one like me in this entire world. That is pretty cool. So many of us are trying to look the same and act the same but not appreciating us. What a blessing it is to only be you. Every time I read this quote I feel empowered and grateful and I hope it does the same for you.

“To lose balance for love is part of living a balanced life” – Elizabeth Gilbert

When you get in a relationship it is hard to balance it all. I used to get upset not being able to find time for everything and felt that my relationship was holding me back from getting more done but when I heard this quote while watching EAT, PRAY, LOVE it instantly clicked in my head. Losing balance for love is ok and is completely worth it.  When you are in love, the house may not get cleaned, things may be delayed, but the love in your heart and the feeling of having someone to cuddle with is just priceless.

What I Brought to Thanksgiving Dinner (Plant-based Thanksgiving Meals)

Happy Thanksgiving everyone!

At my sister’s house in Jacksonville now, soaking up the cool fresh air and calmness that comes with leaving Miami for a few days. Just had Thanksgiving Dinner which included my Mushroom Loaf and Roasted Sweet Potato Chunks. It was my first time making this recipe and it was really delicious.

Vegan Mushroom Loaf Recipe:

Ingredients

  • 1 1/2 cups of chopped Mushroom  (I used Common White Mushrooms)
  • 1/2 cup Chopped Red bell peppers
  • 1/2 cup of celery chopped
  • 1 cup of onions chopped
  • 1 Tbs of olive oil
  • 3 garlic cloves minced
  • Salt and black pepper to taste
  • 1 Tbs of thyme, oregano, chili powder
  • 2 tbs of cumin powder
  • 1/2 cup of ground cashews
  • 1/2 cup of all-purpose flour
  • A bit of sriracha sauce optional

Sauce: This is optional as I did not have BBQ sauce. I basically mixed tomato paste, agave, paprika, and steak sauce.

Directions

  1. Heat saucepan on medium high, add olive oil then chopped onion, celery, mushrooms, Bell peppers, and garlic
  2. Add spices Chili, oregano, thyme, cumin, salt and pepper, sriracha sauce and cook until mushrooms have shrunk
  3. Place in a large bowl then add cashews and all-purpose flour. Mix well then transfer to baking pan.
  4. Place in the oven for 25 minutes at 350 degrees F. Add the BBQ sauce right out the oven.

Roasted Sweet Potato recipes:

Ingredients

  • 3 regular size sweet potatoes
  • 1/2 cup olive oil
  • Salt and pepper to taste
  • 1/2 cup of parsley leaves
  • 1 tbs of onion powder

Direction

  1. Peel and chop the sweet potatoes
  2. In a bowl mix, oil, potatoes, and spices then place on baking sheet
  3. bake in the oven at 400 degrees for 30 minutes
